All Things Cultured is an online fermentation school created by Katerina Lazareva, founder of Byron Fermentary at The Farm in Byron Bay. Designed for home cooks, gardeners, and curious fermenters, the school teaches practical fermentation techniques that transform everyday ingredients into nourishing, flavour-packed foods.
Each course is structured as a clear, hands-on learning experience with step-by-step video lessons, written guides, and recipes you can follow at your own pace. All classes can be completed from the comfort of your home, whenever it suits you, with lifetime access to the course materials.
Drawing on ancestral knowledge and modern fermentation methods, Katerina shares the systems she has developed through years of running a closed-loop fermentary — showing how to turn seasonal ingredients into multiple gut-nourishing ferments while reducing food waste.

A Living Classroom Intensive with Growing Roots Permaculture
Immerse yourself in the theory and practice of regenerative food production through a comprehensive, hands-on course held in The Farm’s Living Classroom. Drawing on permaculture, agroforestry, agroecology and traditional agricultural systems from around the world, this intensive program offers participants the opportunity to learn alongside experienced regenerative producers within working, evolving systems.
Over 13 days of guided learning, participants will explore systems that have been in development for more than eight years, working with natural succession to build soil, sequester carbon, create closed-loop nutrient cycles and produce abundant food, fuel, fibre and farmaceuticals. This course balances deep ecological understanding with practical, on-the-ground skills designed for real-world application.

The Floral Design Series is a hands-on introduction to the art and craft of sustainable floral design, delivered by Poppy & Fern at The Farm in Byron Bay.
Designed as a pathway into retail floristry, this 10-week course builds the foundational skills, knowledge and confidence needed to begin working with flowers in a professional environment, grounded in Poppy & Fern’s farm-to-vase, sustainability-led approach.
Led by Jess Connor, Founder and Creative Director of Poppy & Fern, the program offers students the opportunity to learn directly from one of Australia’s leading farmer florists, gaining real-world insight into the craft, rhythm and realities of working with flowers.

Miniature Goat Experiences with Zendara Farm
Kidding season has arrived at Zendara Farm, bringing a new group of miniature baby goats to The Farm Byron Bay.
Meet the playful Nigerian Dwarf kids, learn a little more about these remarkable animals, and spend time cuddling and connecting with the herd.

When the season gives you more than you can handle alone, we handle it together.
Join Katerina of All Things Cultured and Byron Fermentary at The Farm for a seasonal, hands-on fermentation club, working with whatever is arriving in abundance across the Northern Rivers.
Eight times a year, Katerina will guide a small group through the process of transforming peak-season produce into beautiful ferments to take home.
Each session works with what local growers and farms have in abundance right now, using fermentation techniques that have preserved seasonal harvests for thousands of years.
You’ll leave with several jars, not one token jar, but a proper seasonal haul, along with the knowledge and confidence to keep fermenting at home.

That’s because Seasonal Fermentation Club follows the seasons, not a fixed curriculum. The ingredient might be citrus, tomatoes, papaya or something else entirely, depending on what’s growing in abundance across the region.
The not-knowing is part of the experience. Every session is a small seasonal reveal.
Each session runs for three hours at The Farm, Byron Bay. All produce, jars and materials are included.
You arrive, make, learn and leave with your own seasonal ferments to take home.

Securing the Premium Meat Supply Chain for the Northern Rivers
What does the future of locally grown meat look like in the Northern Rivers?
Join Relocalise Northern Rivers at The Farm for an important community conversation about the challenges facing our region’s livestock producers and what can be done to strengthen our local meat supply chain.
Across Australia, small-scale livestock producers are steadily losing access to local abattoirs and processing facilities. Here in the Northern Rivers, these challenges are becoming increasingly urgent, with limited processing options already impacting local farmers, butchers and communities.
The evening will share the findings of a community-led survey conducted with farmers, butchers and other local stakeholders, alongside updates from people working to find practical solutions.
The conversation will explore the role smaller-scale and micro abattoirs could play in securing the future of locally produced meat, as well as some of the regulatory, infrastructure, funding and workforce challenges that need to be addressed.
Most importantly, this is a working conversation. The goal of the evening is to bring interested people together and establish working groups to help progress the next steps.

Regenerative Agriculture Course with Byron Community College
Explore the many facets of regenerative agriculture through our hands-on collaboration with Byron Community College. Held at The Farm Byron Bay, this practical and inspiring course is delivered over six consecutive Mondays, during which you’ll meet the farmers, growers, and makers who call The Farm home.
Each is an expert in their field, from soil and compost to animals, flowers, fermentation and beyond. Together, they’ll share how they’re regenerating the land, closing waste loops, and nurturing healthy communities.

Grow Cut Flowers Summer is a hands-on, two-day spring workshop designed to set your cutting garden up for a summer full of flowers.
October is the perfect time to sow warm-season annuals, giving plants time to establish before the hot weather arrives. This workshop is dedicated to the bold, colourful and fast-growing varieties that thrive in the heat and keep your garden producing throughout summer and the festive season.
If you dream of armfuls of zinnias, cosmos, celosia, sunflowers, basil, amaranth and all those joyful summer textures, this course will show you exactly how to grow them.
Led by Jess Connor of Poppy & Fern, this practical workshop is ideal for beginners, home gardeners and anyone wanting to grow seasonal flowers with intention.
